Ingredients
  

  • 4 boneless skinless chicken thighs
  • 1 cup fresh pineapple chunks
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha or preferred hot sauce
  • 2 garlic cloves minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground ginger

Method
 

  1. Prepare the marinade by combining pineapple, brown sugar, soy sauce, sriracha, garlic, ginger, olive oil, salt, and pepper in a bowl.
  2. Add the chicken thighs to the marinade, covering them completely, and let them marinate for at least 30 minutes.
  3. Preheat your grill or skillet over medium-high heat.
  4. Remove the chicken from the marinade, allowing the excess to drip off, and discard the remaining marinade to prevent contamination.
  5. Cook the chicken for about 5-7 minutes on each side, or until nicely browned and cooked through.
