Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes.
In a mixing bowl, combine shredded chicken, Buffalo sauce, cream cheese, half of the cheddar cheese, and green onions.
Season the mixture with salt and pepper to your taste.
Stuff the bell peppers with the chicken mixture generously.
Place the stuffed peppers in a baking dish and top with the remaining cheddar cheese.
Cover the baking dish with foil and bake for 25-30 minutes.
Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
Allow the stuffed peppers to cool for a few minutes before serving.
