Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup cream cheese softened
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the spinach, feta, cream cheese, garlic, oregano, salt, and pepper until well combined.
  3. Make a pocket in each chicken breast by slicing horizontally, but not all the way through.
  4. Stuff each chicken breast generously with the spinach and feta mixture, securing with toothpicks if necessary.
  5. Heat olive oil in an oven-safe skillet over medium heat, then place the stuffed chicken breasts in.
  6. Cook for 4-5 minutes until golden brown on one side before flipping them over.
  7. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through (165°F internal temp).
  8. Remove from the oven, let rest for about 5 minutes, and serve hot!
