Method
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the spinach, feta, cream cheese, garlic, oregano, salt, and pepper until well combined.
- Make a pocket in each chicken breast by slicing horizontally, but not all the way through.
- Stuff each chicken breast generously with the spinach and feta mixture, securing with toothpicks if necessary.
- Heat olive oil in an oven-safe skillet over medium heat, then place the stuffed chicken breasts in.
- Cook for 4-5 minutes until golden brown on one side before flipping them over.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through (165°F internal temp).
- Remove from the oven, let rest for about 5 minutes, and serve hot!
Notes
For best results, serve immediately after cooking. Leftovers can be refrigerated and reheated in the oven to maintain texture.
