Method
- Preheat your oven to 375°F (190°C).
- Prepare the bell peppers by cutting the tops off and removing the seeds.
- In a large skillet, cook the ground beef over medium heat until browned.
- Add onions and garlic to the beef, cooking until softened.
- Stir in cooked quinoa, diced tomatoes, cumin, Italian seasoning, salt, and pepper.
- Stuff each prepared bell pepper with the beef and quinoa mixture, packing it firmly.
- Place the stuffed peppers in a baking dish and sprinkle with cheese on top.
- Cover the dish with foil and bake for 20 minutes, then remove the foil and bake for an additional 10–15 minutes until the cheese is bubbly and the peppers are tender.
Notes
For best results, serve warm straight from the oven. Leftovers can be stored in an airtight container for up to three days, making them great for meal prep.
