Method
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the olive oil, garlic powder, oregano, smoked paprika, salt, and black pepper.
- Add the chicken breasts to the bowl and coat them thoroughly with the seasoning mixture.
- Spread the chicken on one side of a large baking sheet, leaving space for the vegetables.
- Now, on the other side of the baking sheet, arrange the sliced bell peppers, zucchini, and red onion.
- Drizzle a little more olive oil and season the veggies with salt and pepper to taste.
- Roast in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and veggies are tender.
- Remove from the oven and let it rest for a few minutes before slicing the chicken.
Notes
Leftovers can be stored in an airtight container in the fridge for up to three days. To reheat, simply warm in the oven or microwave until heated through.
