Deliciously Soft Red Velvet Sugar Cookies

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup unsalted butter softened
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar for frosting, optional
  • 4 oz cream cheese for frosting, optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs, red food coloring, and vanilla extract to the creamed mixture; mix well until combined.
  5. Gradually mix in the dry ingredients until just combined, taking care not to overmix.
  6. Scoop tablespoon-sized balls of dough onto a lined baking sheet, leaving space between them.
  7. Bake for 10-12 minutes, or until the edges are set but the centers look slightly underbaked.
  8. Remove from the oven and let cool on the baking sheet for a few minutes, then transfer to a wire rack.
  9. If desired, prepare a frosting by blending cream cheese and powdered sugar until smooth, then frost cooled cookies.
