  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs

  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup Biscoff spread

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the eggs, one at a time, followed by the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in the chocolate chips until evenly distributed.
  7. Scoop out a tablespoon of dough, flatten it slightly, and place a small spoonful of Biscoff spread in the center before wrapping the dough around it.
  8. Place the stuffed cookie dough balls on a baking sheet lined with parchment paper, spacing them at least 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are set and the centers look slightly underbaked.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
