Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ cup unsalted butter cold and cubed
  • cup granulated sugar
  • 1 large egg yolk
  • 2 tablespoons ice water
  • 8 ounces dark chocolate 70% cocoa, chopped
  • 1 cup heavy cream
  • 2 tablespoons granulated sugar for filling
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Method
 

  1. Prepare the tart crust by blending the dry ingredients.
  2. Cut in the cold butter until crumbly.
  3. Mix in the egg yolk and ice water.
  4. Chill the dough before rolling it out.
  5. Roll out the dough and transfer it to a tart pan.
  6. Pre-bake the crust until firm.
  7. Prepare the ganache by heating the cream.
  8. Combine chocolate and cream to make ganache.
  9. Add sugar and vanilla, mixing until well combined.
  10. Pour the ganache into the pre-baked crust.
  11. Chill the tart until set.
